What a Week! with Rotini, Sausage and Veggies

     Ok last week I set myself some goals to start while the kids are at school. I am happy to say I got most of my goals done yay!!
1. I will be sharing the new recipe of Rotini, Sausage and Veggies that I made here is a picture and below is the recipe. If you like you can just skip over the recipe and see if I
achieved the rest of my weekly goals.  



This recipe was actually from a family circle magazine and the name of it was Rotini with Sauteed Chicken Sausage and Vegetables. I did not use Chicken sausage so mine is a little different.
1/2 lb green beans (fresh) with the ends cut off
1 head of broccoli cut into florets
1 box whole wheat rotini pasta
2 tbsp olive oil
1 package polka kielbasa sausage
4 cloves garlic, chopped
1/2 cup chicken broth
1 cup grape tomatoes cut into halves
1/2 tsp dried oregano
1/2 tsp salt
1/8 tsp black pepper
1 tbsp basil
2 tbsp grated Parmesan

Boil the green beans and broccoli for 3 minutes then remove from water. Add rotini to your already boiling water and follow cooking instructions on package. You can reserve a cup of the water after you are done boiling the pasta to make it seem more saucier when done. Drain the pasta.

While you are cooking the veggies heat up 1 tbsp of olive oil on a nonstick skillet over medium - high heat. cook your sausage about 3 to 4 minutes on each side. You just want them to brown a little. Remove the sausage from pan and add the remaining oil, the green beans, broccoli and garlic. Cook 2 minutes then stir the sausage back in and add broth, tomatoes, oregano, basil, salt and pepper. Simmer for 2 minutes.

Toss the pasta with the vegetables and you can now add the reserved water that you set aside. Top with Parmesan and serve.

My whole family loved this dish!!

Now to goal 2:
Goal 2 was to organize or deep clean something or some area in my house. I choose my desk. It gets cluttered with paper till you can not even see the screen. I went through all my piles of papers and through away all the junk. It took me a days worth of work honestly it was a mess. But I got it done. I also was able to do some pretty good deep cleaning on my bathroom.

Goal 3:
I really can not think of a crafty project I did except what I did for goal 4.

Goal 4:
Was to dedicate some of my time to Church or School. I ended up working at the church in our prophet inn. We have a little guest room at our church and I wanted to give it a little more of a homey feel so I went to the thrift store and bought some decorations and spent a little time decorating it. I would say decorating can count as a crafty project too (goal 3)!

Goal 5:
I wasn't able to help the kids a lot with their studies but I did read a book to Autumn (my kindergarten girl) one night. That's gotta count for something!

Goal 6:
Having an activity with the kids besides our family devotion. This was honestly really hard and I planned on playing a board game with my kids on Saturday. However my kids felt differently about spending time with me, all during their chore time they fought and fussed. Unfortunately one of the privileges that was taking away was my activity :(. But this week I am planning to take them swimming on Friday. So hopefully it will work out better this week.




I tried my best this week on my goals and I felt like I achieved a lot more then I thought I would. I am very excited to take on the same challenge this week and see how I do. I already have plans for a new recipe that I will be making on Saturday and posting next week. I have a goal to take the kids swimming. And this week I will be working on cleaning out My CLOTHES (AHH). My husband is going to tackle our carport and laundry room. I will probably help him some with that project too! Maybe for my craft I can work on my scrapbook, oh how I need to catch up on it!
